Cinco de Mayo Pizza Party
Pork Carnitas Pizza and Chicken Taco Pizza:
Cinco De Mayo is here, and that means it’s time for a Mexican themed pizza party! A delicious (and healthier too!) variant of pork carnitas pressure cooked in a blend of flavorful homemade stocks (rather than the heavier, traditional animal fat) and a light, fresh-tasting chicken “taco” pizza with fresh tomato, crisp tasting cilantro, and cool avocado are both on the menu for this fiesta (along with plenty of cerveza to pair with them). Accompanied by Flying Dog Brewery’s “Agave Cerveza”, a lager brewed with lime zest and agave nectar, to complete the atmosphere.
Pork Carnitas Pizza: homemade pressure-cooked pork carnitas (made from pork shoulder cut off the bones and cubed, browned chicken stock, browned pork stock, chili powder, chipotle powder, homemade hot sauce, salt, fresh squeezed lime juice, cumin, black pepper) oregano, basil, fresh cilantro (a.k.a. coriander leaves), diced fresh tomato, tomato sauce, grated cheese.
- Homemade Pressure-Cooked Pork Carnitas (made from pork shoulder cut off the bones and cubed, browned chicken stock, browned pork stock, chili powder, chipotle powder, homemade hot sauce, salt, fresh squeezed lime juice, cumin, black pepper)
- Oregano
- Basil
- Fresh Cilantro (a.k.a. coriander leaves)
- Diced Fresh Tomato
- Tomato Sauce
- Grated Cheese
- Homemade Pizza Dough
- Stretch pizza dough into desired shape to fit the pizza peel, oven opening, or pizza stone to be used (whichever is smaller).
- Cover pizza dough with tomato sauce, then top with grated cheese, basil, oregano, tomato, and the homemade pork carnitas.
- Bake until edges are crisp.
- Remove from oven and top with cilantro. Let cool before cutting.
Chicken Taco Pizza: home roasted chicken meat, cheddar cheese, fresh diced tomatoes, queso quesadilla, chili powder, fresh cilantro, asadero cheese, onion powder, cumin, homegrown chili flakes, basil salt, montery jack cheese, salsa “tomato sauce”, black pepper, diced fresh avocado, and a sour cheese sauce to cool down the spices.
- Roasted Chicken Meat (pulled)
- Cheddar Cheese (shredded)
- Fresh Tomatoes (diced)
- Queso Quesadilla (shredded)
- Chili Powder
- Fresh Cilantro(a.k.a. coriander leaves)
- Asadero Cheese (shredded)
- Onion Powder
- Cumin
- Chili Flakes
- Basil Salt
- Montery Jack Cheese (shredded)
- Salsa “tomato sauce” (a blend of fresh made salsa and tomato sauce)
- Freshly Ground Black Pepper
- Fresh Avocado (diced)
- Sour Cream
- Pizza Dough
- Stretch pizza dough into desired shape to fit the pizza peel, oven opening, or pizza stone to be used (whichever is smaller).
- Cover pizza dough with salsa “tomato sauce”, then top with cheddar cheese, tomatoes, queso quesadilla, asadero, montery jack, chili flakes, and ¾ of the roasted chicken.
- Bake until edges are crisp.
- Remove from oven and top with remaining ¼ of roasted chicken meat, then top with onion powder, cumin, chili powder, basil salt, fresh cilantro, and fresh avocado. Drizzle with sour cream. Let cool before cutting.
